Guinep is made by Guinep NA Cocktail Co., founded by flavor developer Aaron Wisniewski, who also started the Alice & the Magician flavor lab back in 2012. The brand is based in Burlington, Vermont, where it works out of the flavor lab in the Soda Plant on Pine Street. The guinep itself is a small green Caribbean fruit Wisniewski first tried in Puerto Rico, and he recreates its flavor in the lab rather than using the fruit.
