Liber & Co. Pineapple Gum Cocktail Syrup

It's sweet, tart, and tropical, made with 60% ripe, cold-pressed pineapple juice. All-natural gum arabic gives it a distinctive richness and thicker viscosity than a standard simple syrup.

It's built for non-alcoholic tiki drinks. Mix it with ISH Caribbean Spiced Spirit or another NA rum plus a splash of coconut milk for an easy Piña Colada, stir it with zero-proof rum, lime juice, and ginger beer for a Dark 'n' Stormy riff, or shake it with Lapo's Aperitivo, ISH London Botanical Spirit, lime juice, and orgeat for a Jungle Bird.

The ingredients are pineapple juice, cane sugar, gum arabic, citric acid, and benzoic acid. The 12.7 oz bottle holds about 19 half-ounce servings, at 38 calories each.

Liber & Co. is a Texas cocktail syrup maker started in 2011 by Chris Harrison and brothers Adam and Robert Higginbotham, who met as students at the University of Texas at Austin. They make their syrups in their own production facility in Central Texas — their site's about page describes a custom facility in Austin, TX, while their current listed address is 4045 Airport Rd. in Georgetown, TX, just north of Austin. The syrups themselves are non-alcoholic, so they work just as well in zero-proof drinks as in cocktails.
