Bittermilk No. 5 Charred Grapefruit Tonic with Bulls Bay Sea Salt

This isn't your typical tonic syrup: it's better. Cinchona bark, fresh squeezed lemon, lime, and grapefruit juice, and charred grapefruit peel. Roasting the peel brings out a crisp bitterness and the refreshing citrus oil. A pinch of Bulls Bay Saltworks sea salt brings out the savory caramel notes and rounds out flavor.

Works well with any light spirit, but we particularly like GinISH and ISH Mexican Agave Spirit. Build over ice equal parts No.5 + spirit + soda water in a tall glass. Garnish with a lime wedge.
