Pear Peach Fizz Mocktail
Those who want more than a glass of sparkling water will love this recipe. A quick fruit puree will instantly turn your favorite sparkling water into a deliciously refreshing beverage with lovely hints of fruity flavor. For this specific recipe, pears and peaches are the stars. The pear brings a sweet fragrant aroma as well as the selected variety's signature taste (any pear will do) while the peaches bring that classic peachy flavor best described as sweet with a touch of acidity. Homemade puree made with fresh fruit is best, but you can use store-bought if you want to save time. There is also the option to make the puree in advance and store it in the refrigerator so you can easily make a beverage or two whenever you wish. The puree can be chilled for up to three days or frozen for up to 3 months. If frozen, just thaw, add to a glass then top with water.

Ingredients

Puree

2 cups water

2 ripe pears, cored and sliced

2 ripe peaches, pitted and sliced

Juice of half a lemon
Peach-pear fizz

1 tablespoon pear-peach puree

1 cup tonic or sparkling water, chilled

Directions
To make the puree:

Bring the water to a boil in a medium pot with a steamer inserted.

Add the sliced pears and peaches.

Cover and let steam for 10 minutes or until tender.

Transfer the fruit to a food processor with the lemon juice. Reserve about ¼ cup of the cooking water.

Process until smooth.

Strain.

Let cool for at least 10 minutes.
For the pear peach fizz mocktail:

Add one tablespoon of the puree to a glass.

Top with tonic water.
