The Perfect Non-Alcoholic Espresso Martini

There are a lot of recipes for non-alcoholic espresso martinis out there, but they almost always lack the thick head of foam that makes their alcoholic cousins so photogenic. Not anymore. 

After a lot of experimentation, we found the secret ingredient that yields a foam so dense you could float a dozen espresso beans on top of this drink. 

This recipe is adapted from Ian Blessing of All the Bitter. 

INGREDIENTS: 

DIRECTIONS: 

  1. In a cocktail shaker, pour non-alcoholic rum, The Pathfinder, Orange Bitters, maple syrup, and instant coffee. Dry shake (without ice) for 30 seconds.
  2. Add ice and shake for an additional 30 seconds.
  3. Strain through a hawthorn strainer into coupe glass. Give the cocktail shaker a little jiggle and swirl while straining to get every last bit of foam.
  4. Float 3-4 espresso beans (or more, if you like!) on the foam to garnish.
