The Perfect Non-Alcoholic Espresso Martini Recipe

There are a lot of recipes for non-alcoholic espresso martinis out there, but they almost always lack the thick head of foam that makes their alcoholic cousins so photogenic. Not anymore.
After a lot of experimentation, we found the secret ingredient that yields a foam so dense you could float a dozen espresso beans on top of this drink.
This recipe is adapted from Ian Blessing of All the Bitter.
INGREDIENTS:
- 2 ounces non-alcoholic rum, like the ISH Carribean Spiced spirit
- 2 ounces The Pathfinder Hemp & Root
- 3-6 droppers of All the Bitter Orange Bitters
- ½ ounce pure maple syrup
- 1 tsp craft instant coffee (we recommend Perc Brazil Blend)

3-4 espresso beans, to garnish
DIRECTIONS:
- In a cocktail shaker, pour non-alcoholic rum, The Pathfinder, Orange Bitters, maple syrup, and instant coffee. Dry shake (without ice) for 30 seconds.
- Add ice and shake for an additional 30 seconds.
- Strain through a hawthorn strainer into coupe glass. Give the cocktail shaker a little jiggle and swirl while straining to get every last bit of foam.
- Float 3-4 espresso beans (or more, if you like!) on the foam to garnish.
